Walnut Cookies

Everyone needs a recipe that they can make on a moment’s notice with ingredients they always have on hand. That’s not necessarily what I was looking for this week with this recipe, but I was definitely pleasantly surprised when it worked out.

Cakes seem like they have it pretty good. Always out on display in bakery windows, drawing people in. Frequently the centerpiece at special occasions. Oohed and ahhed over when they’re particularly well designed. But I’d argue that they actually get the short end of the stick when it comes to baked goods.

Donut Bread Pudding with Whiskey Sauce

I have had my eye on this recipe since I first got my Boozy Baker cookbook. And it’s not like I haven’t had ample opportunity to make it before. I always have whiskey on hand. Donuts are easy to go get. I’m a huge fan of anything that only involves one dish.

I think the only good thing that comes out of the Patriots not being in the Super Bowl is that while the game is on, I’ll be able to get work done. Which means I was able to spend a good amount of the afternoon baking. And, more importantly, baking a recipe my roommate sent me probably in October: Apple Cider Donuts.

The Green Harbor Labor Day Races were the highlight of my summers growing up. Every year, we spent the long weekend at the beach with my mom’s whole family, competing in (and winning) swimming, running, and three-legged races, egg tosses, and the local parade. We had cookouts, went looking for crabs, walked on the jetty, and generally did everything you would think we would do in a quintessential New England beach town.

Sometimes, when I’m feeling particularly blog-writer-ish, I take stock of what I’ve posted and what I’m lacking. In the world of baking, it quickly becomes apparent that I love to make cookies. I have four pages worth of cookie posts, and they are always what I turn to when I’m not sure what to make. I also like cupcakes. And brownies/bar cookies. But then I get to my pie category, and realize that it could use some love.

This weekend, I had the pleasure of hosting the lovely Molly Hayes for plenty of beach time and country music.  And since we went to college together, we decided to recreate a treat from a favorite bakery in New Haven: Claire’s.  Thanks to Marj, I have the Claire’s cookbook, and the cookbook has my absolute favorite cake from the store: Lithuanian Coffee Cake.
