Treats for appetites of every size
What do you do when your boyfriend asks you to pick up his root vegetable CSA? Google carrot recipes, thinking you’ll be able to get through them quickly, and realize that even carrot-based recipes don’t use enough carrots to make a dent in your bag of produce. Guess that means I’ll have to make carrot cake for Easter! (Also, if you can think of any other carrot recipes, any at all, please send them to me. Doesn’t have to bae a baked good!)
Things that happen when you have a big paper due on Monday morning: you push off your blog post until past 10pm. But I’m yet to skip a Sunday entry since starting law school, and I refused to let a little assignment get in the way.
So I had no intention of making carrot cake cupcakes today. Tomorrow is the first day of school (Yay!) and I wanted to make something quick, but when I was looking through ingredients, I dropped my carton of eggs and three cracked. This recipe called for three eggs, so I put on Mamma Mia and went for it (Side note: the Mamma Mia soundtrack is hands down the best baking music I’ve ever found).
