Last week, I mentioned that I had made some pumpkin bread. Now that I’m back on the East Coast, where people are as obsessed with pumpkin as I am (I currently have a pumpkin spice candle lit next to my computer), it felt like a good time to post it! It has been a baking marathon at my parents’ house this week. I have made four separate, brand new, types of cookies AND have the components of a trifle in the works right now. Pumpkin Turkey Cookies

Putting aside final exams and cramming, I love the period from Thanksgiving through New Years. So many fun holidays. So much time with family and friends. A general feeling of magic happiness with good food, buying presents for people, and snow. Also, unending opportunities to bake. 

Pumpkin Cheesecake

The last of my back up recipes: Pumpkin Cheesecake. I probably had time to bake this weekend, but it was kind of nice to just be lazy instead. We’ve got a long weekend from school, but the rain and general yuckiness stopped us from heading into the mountains as planned. Oh well. Watching High School Musical and exploring the Massachusetts area isn’t a terrible alternative.

Spiced Oatmeal Cookies

As you’re reading this, I’m either driving up to New Hampshire or already there, spending four days in the mountains and 100% off the grid to celebrate finishing my second year of law school. So when deciding what to bake this week, I wanted some kind of treat we could bring with us, but still felt hearty enough to eat on the trail. That’s how I landed on spiced oatmeal cookies.
