She calls them small-batch, though, which is what drew me to them. Sourdough Pancakes

I always feel a little bit like pancakes don’t quite belong on this blog. As a baker, I’m drawn to breakfast food, and they do have cake in their name, but they seem like less of an adventure than other things I make. But I wanted to make another loaf of sourdough bread this weekend, and was already feeding my starter, so decided to give these a try. As consolation for them not being super exciting, I’ll supplement them with a good story.

Light and Fluffy Pancakes

I will never take my electric mixer for granted again. I don’t even feel bad about using a breakfast recipe this week after the feat I undertook to make these pancakes. True dedication to your craft is hand-whisking egg whites until stiff peaks form. I feel like this is a big milestone in my baking career.

I think the only good thing that comes out of the Patriots not being in the Super Bowl is that while the game is on, I’ll be able to get work done.
