Buttered Marshmallows

This is the last recipe from my cookie boxes! And just in time, honestly – I’m finally back to the point where I miss baking and want to try to make something fun again. Maybe some mini Bundt cakes? Gruyere thyme crackers? The peanut butter miso cookies I’ve been meaning to make for months? The possibilities are endless! These may seem like a weird concept (buttered marshmallows), but hear me out. I made marshmallows before, and became obsessed with homemade marshmallows. These ones are a bit different. Less gelatin, no cornstarch, more vanilla, and butter. The result is a unique

Marshmallows

I bought the ingredients to make these 3 weeks ago. And then things kept coming up. I had to use up the egg whites and make chocolate chip meringues. Alexandra had a birthday so I made chocolate caramel tart. Liz asked for cookies for her clients so I made cowboy cookies. This weekend, finally, I got to make marshmallows! And, honestly, this recipe has been in the back of my head for much longer than 3 weeks. I think it was in college when Marj first introduced me to the idea that you can make homemade marshmallows. I remember her

S’mores Blondies

November might be a weird time to make s’mores-themed things, but I think campfires carry into the fall. Also, my running offer is that any first year (or I guess we’re now second years?) in the corporate group at work can request whatever they want for their birthday. Taylor wanted something s’mores, and these blondies looked like the best way to accomplish that. Start by pulsing the graham crackers in a food processor until they are finely ground. Add the flour, baking powder and salt and pulse a couple more times to combine. In a stand mixer fitted with the

Devil Dogs

One of my favorite places to look for inspiration for this blog is my mom’s recipe box. She has all of these cards from her mom and family, handwritten and passed down. A lot of things I’ve made for the blog come from those cards. This week, I started thinking I was going to make apple crisp. My mom said Grammy had a good recipe, so I opened up the box. I found an apple pie recipe, but then I found something even more exciting: devil dogs. Devil dogs are kind of like whoopie pies, but longer and with a

Chocolate Peanut Butter S’mores

I’d love to tell you a cute story about my weekend, but I’m trying to beat the buzzer getting this posted on Sunday. TL;DR: Erik visited, which made it my absolute favorite weekend of the summer, despite working over the holiday. Now for some baking! First, make the peanut butter cookies. Start by grinding up the peanuts in a small food processor. n a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium high speed for about 2 minutes, until light and fluffy. Add the egg yolk and beat to combine. Add the maple syrup

Hot Cocoa Cookies

Week three of Christmas cookies. After this, I’ve only got one more recipe to post. But you may have to wait for it – I’m beginning to really miss my weekly baking adventures, and think I’ll have to try something new this week. Not that I haven’t been baking. I made a couple loaves of sourdough bread this morning. I just haven’t made anything new in awhile. But this week’s recipe is fitting for the ridiculously cold weather we’ve been having the past couple of days. Because if you don’t already have a box of hot chocolate on hand, you

Nutella Rice Krispie Treats

Good thing it’s Daylight Savings Time, or I wouldn’t have gotten this blog post up in time! I was really torn about whether to bake this week, because I made some chocolate cupcakes with butterscotch filling last week, and had been kind of planning on using those. But then I decided that since the base chocolate cupcakes were the same as ones I have made in the past, I couldn’t use a slight variation on them. Instead, at around 6pm today, I asked my roommate for some ideas on desserts I could make quickly, and she recommended Rice Krispie Treats.

Rice Krispie Treats

Happy 3rd of July! Really the superior of the summer holidays, in my opinion. Nothing beats a day at the beach followed by a night of fireworks and bonfires. And, of course, cookout food.

S’mores Whoopie Pies

It’s my last weekend of summer vacation. And I still haven’t had a s’more. For some reason, as you grow up, the number of opportunities you have to consume s’mores in the summer greatly decreases. When I was younger, I feel like there was always a fire pit ready and waiting for me to perfect my marshmallow roasting skills, whether on a beach, at a campsite, or in someone’s backyard. We even had an indoor s’mores maker for when there wasn’t a fire handy. This summer, however, I can distinctly remember the one opportunity I had (back in July at

Cake Batter Rice Krispie Treats

There were two possible starting sentences to this post and I couldn’t decide between them. Every so often my inner Gemini gets the best of me. They also lead to very different musings, so rather than choose one I’m including both. You should probably read the post twice, too. Then you’ll get the full effect.
