Blackberry Lime Muffins

I really intended to make a pie today. It’s Pi Day, and it’s a Sunday, and Erik has been patiently waiting for me to make him a pie for six months. But then I remembered the important part about pie – you need to let the dough chill, preferably overnight, which wasn’t going to happen when I started looking at recipes at 1pm this afternoon. The plan had been blackberry pie, so instead I made blackberry muffins. These were quick, made a little more interesting with some lime zest, and will hopefully be a good breakfast/snack/treat for the week. Start

Raspberry Apple Muffins

Another of my awesome baking-related Christmas presents this year was silicon cupcake cups. This may not seem revolutionary, but they’re in some very happy colors, and I have a really bad habit of deciding to make cupcakes or muffins only to realize, once the batter is made, that I don’t have any paper cupcake cups on hand. Enter silicon baking cups – never again will I have to run to CVS only to find out that CVS doesn’t carry cupcake liners! When trying to decide what to make in my new silicon liners, I wanted to make something that I

Morning Glory Muffins

Happy birthday week, Mom! Yesterday, we kicked off the festivities with a surprise party for her. I think, miraculously, we actually pulled it off, and it was great to see so many people come out to celebrate such an amazing woman. Today, we kept the party going with some coconut baking: Morning Glory Muffins.

Corn Muffins

J-term is Harvard’s gift to 1Ls after the insanity of final exams. After finishing last semester, I had been looking forward to a couple weeks at home to rest and recoup. But breaks usually aren’t actually all that much of a break when you think about it. You have to run all of the errands you ignored for the month you spent in the library. You have lots of family and friends to go see and spend time with. You realize that you haven’t thought about applying to jobs yet and that’s going to sneak up on you faster than

Oatmeal Mini Muffins

I love breakfast. It combines everything I like in a single meal. Eggs. Cheese. Bacon. Carbs. Sweets. It can be warm and savory. It can be refreshing and simple. Many things that normally would not necessarily qualify as a meal find their way into breakfast. Smoothies, which are really just glorified frappes, become nutritious at breakfast. French toast, which we should all just admit is a vehicle for syrup and sugar, is a mainstay at any self-respecting breakfast establishment. It really is a surprisingly versatile meal.

Fig Muffin Tops

At some point this summer, I became obsessed with figs.  I think it may have had to do with a flatbread I had at a bar and went back for 3 separate times.  So when I was at the supermarket this week and saw that they had figs that you could buy by the box, I couldn’t resist.
