Small Batch Olive Oil Lemon Bars

Happy Valentine’s Day! Erik and I just finished a feast and I’m writing this as I’m about to slip into a food coma powered by Schitt’s Creek on the couch. We ordered cook at home hot pot and it was perfect – lots of delicious food, a fun thing to do. Highly recommend. If you’re in the DC area check it out – Fat Choi Hot Pot. Also in the Valentine’s Day trend, Erik has been talking about how much he loves lemon bars for weeks now, and I thought it was probably a good time to make him some.

Apple Olive Oil Cake

Yesterday, Erik and I biked 30 miles around DC on a perfect Fall day (which we later learned was unseasonably cool for September). This got me in the mood to make something Fall-ish, and Alexandra must have read my mind. When we got home from the ride, I had a text from her with this recipe, and it solved all of my “what should I make this week” problems. Mixed Berry Crisp

Hi all. Did this post come after midnight? Maybe. Was that because I was having a great Sunday hanging out with my family? Definitely. Don’t worry – Erik informed me I still have 4 hours (ish) Alaska time before this is late. Start by combining the berries, cornstarch, brown sugar, lemon juice and salt in a medium bowl. Spread into an 8×8 pan sprayed with cooking spray. In a large bowl, stir together the oats, almonds, almond meal, brown sugar and salt. Sprinkle in the olive oil and stir until combined. Sprinkle the topping over the fruit. Bake at 375°F

Olive Oil Ice Cream

A realistic snapshot into my life: It’s Thursday at 10:32pm. I’m sitting on my bed, having just finished up (kind of) work for the day. I’m doing laundry because I realized too late that I didn’t have any clothes to pack for a trip to Philly. I fly out tomorrow morning at 6:45am. I can’t finish packing until my laundry is done. I’m not really sure why the weather went from full Summer to deep Fall in the last couple of days, but it has definitely helped ease the transition into my last year of law school. Today, with the rainy coldness that is the outdoors, baking warm cupcakes indoors has been an ideal activity. It would have been a great day to make some sourdough bread, but that would have required much more foresight than I had this week.
