In my third installment of Christmas cookies, I bring you a twist on a classic: candy cane Oreos. I’ve made a similar dessert as a gluten free whoopie pie, but I think these are much better. Crispy cookie, fluffy buttercream, and some chopped candy canes for good measure. This week, I baked for the first time in my new kitchen! Spoiler alert: it was awesome. Plenty of counter space. Pretty new toys to play with (read: stainless steel mixing bowls). And a whole new group of people to eat the end product! Plus, central air conditioning, which means turning on the oven was not the horrific experience it could have been in this insanely hot summer we’ve been having.
Happy Father’s Day to the best dad a girl could ask for! Today, I spent an absolutely wonderful day with my dad, reading at the beach, kayaking/paddle boarding, and generally enjoying South Shore life. And, because it’s his day, I made a recipe this week that is one of his favorites: Icebox Cake. Icebox Cake is good for a number of reasons. It only has three ingredients. You don’t have to turn on the oven. And the finished product kind of tastes like Oreos but better.
I think Thursday night baking is going to be a thing. With only one class on Friday, it’s a great time to not do work. Also, with having class on Friday, I’m guaranteed about 80 people who don’t mind a morning pick-me-up.
This week’s post has been about a month in the making and is wholly inspired by J.P. Licks, an ice cream shop in Harvard Square, which provided dinner in the form of cookies and cake batter ice cream for my roommate and me a couple weeks back. It was life changing, and I have been trying to find the best way to recreate it ever since.
Last week was my birthday, which is the best day of my birthday week, which is the best week of my birthday month. I’m not sure when exactly I decided my birthday was in fact a month-long event, but it was definitely a decision that I stand by. In fact, I was still celebrating my birthday week this weekend at Taste of Country Music Festival, which is why this post is a day late.
