Peanut Butter Miso Cookies

I’ve had these cookies on my list for months. Originally they were going to go in my Christmas cookie boxes, but we had red miso, not white miso, in the fridge, and I like to follow recipes exactly (much to Erik’s general dismay). But now that I’m back in the baking game, I needed to give them a go, especially because they seemed like a perfect cookie to bring with us on our mini vacation this week. I made these cookies last night right before we were going to try an at-home fancy 5 course meal where the restaurant sends

Peanut Brittle

Back to Christmas cookie boxes this week with one of the two non-cookie recipes I put in the boxes this year: peanut brittle. I think it’s fitting to still be sharing cookie box recipes because some of the cookie boxes I mailed out (3 day priority mail about 2 weeks before Christmas) just this week got to their destinations. USPS needs its funding restored. Anyways, peanut brittle went in the boxes this year as a compromise. I really wanted to try to recreate Williams-Sonoma peppermint bark, but then once I started looking at recipes realized it was a project in

Caramel Peanut Brownies

“;.////////////////////////////////////p;//” – From Elwynn, who decided to walk across my iPad when I started typing this up. He did capture how I feel about this week though – I could use another 3 weekends right now. But I think that’s just February for you. Fortunately, I did get to spend some time making something new – caramel peanut brownies! Meg Fay, one of the other second years at my firm, has a birthday this week. She requested something “chocolate and peanut butter, or chocolate and caramel” and I was able to find something that was chocolate and peanut AND caramel.

Homemade Reese’s Cups

My Instagram followers were very excited about this recipe, so I wanted to get it up early enough in your Sunday that you would still have time to make them before the weekend was over! Also, if you don’t follow me on Instagram, but are interested in sneak peeks of what I’m making and gratuitous pictures of my cat sitting at the counter, you can find me as @smilesbymeg. Basically this came about through some mindless scrolling of my NY Times Cooking app, which I was really on to find a dinner recipe (I settled on pumpkin coconut curry). Then

White Chocolate Peanut Brittle Ice Cream

Photographing ice cream continues to be one of my weaknesses in the food blog world. I really enjoy eating ice cream, but usually do so out of a mug, which is not really the best presentation. I could probably start keeping cones around for this purpose, but who, sitting on the couch late at night with a glass of wine, wants to eat an ice cream cone? It also didn’t help that I was making this ice cream on a rush basis before heading down to Rhode Island for a wedding, so didn’t actually get to take a picture of

Chocolate Peanut Butter S’mores

I’d love to tell you a cute story about my weekend, but I’m trying to beat the buzzer getting this posted on Sunday. TL;DR: Erik visited, which made it my absolute favorite weekend of the summer, despite working over the holiday. Now for some baking! First, make the peanut butter cookies. Start by grinding up the peanuts in a small food processor. n a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium high speed for about 2 minutes, until light and fluffy. Add the egg yolk and beat to combine. Add the maple syrup

Nutter Butters

I’m not really sure why I decided I needed to make Nutter Butters this week, but I decided it was my recipe on like Tuesday and became fixated on the idea. Maybe it’s because it’s Girl Scout cookie season, and I was getting nostalgic for cookies of youth. (I have, kid you not, 5 boxes of Girl Scout cookies in my office right now.) Maybe it’s because Marj had me watching videos of how to make homemade versions of other treats I think are best when you buy the processed version (Cheetos, Twizzlers, etc.) Maybe it’s just because I like

Reese’s Pieces Cookies

I had such a baking-ful week! In addition to making these cookies, I also made pumpkin bread (which I’ll post next week), sourdough bread (which I’ll post at some point), and Trout Farm Apple Pie! Having this blog, I don’t often get to make a recipe more than once, since I always need something new for the weekend and a girl can only make so many recipes in a week. But when some friends invited us over for dinner, and I’d already made plenty of new stuff, I realized I had a chance to make one of my favorite recipes

Peanut Butter Brownies

When I first started this blog, I think I envisioned myself making a lot more brownies than I actually do. In creating categories for my recipes, I apparently didn’t think “Bar Cookies” was specific enough, and made a whole separate category for “Brownies.” But now I have 23 recipes under Bars and only 11 under Brownies. Let this recipe be a first attempt at remedying this situation.

Quick Bark

Ever find yourself in need of a quick dessert for a holiday? This is your solution. All it takes is a quick trip to Michael’s (or whatever other craft store you know of that sells every possible color of Candy Melts), and maybe 30 total minutes of assembly and waiting time. End result looks very impressive, is endlessly adaptable to your tastes, and can be piled in a tupperware without worrying about ruining it. Extra perk? It fills the need at cookouts for something sweet at the end of a big meal without requiring the commitment of a slice of
