Peppermint Oreos

Looking back over the years, I’ve tried to make Oreos a few times. When I first moved into my apartment in Boston after law school, I gave them a go with this recipe. Then, a couple months later, I tried to recreate the Trader Joe’s candy cane Oreos with this recipe for my Christmas cookie boxes. Both seem to have been successes at the time, but they also both pale in comparison to the ones I made for my cookie boxes this year, a much more impressive looking and subtly peppermint variety out of BraveTart’s cookbook, of course. Candy Cane Oreos

In my third installment of Christmas cookies, I bring you a twist on a classic: candy cane Oreos. I’ve made a similar dessert as a gluten free whoopie pie, but I think these are much better. Crispy cookie, fluffy buttercream, and some chopped candy canes for good measure. These cookies were inspired by Erik, who called me a couple of weeks ago to tell me about the amazing cookies his neighbor had made – fudgy chocolate with chocolate frosting and candy canes on top. This stuff is supposed to help mimic a recipe that would otherwise call for flour, so if you want to make something recognizable as a

Peppermint Meringues

Christmas is a week away and I still haven’t made my cookie tins! Looks like I know what I’ll be doing in my five days post-finals (other than all of the shopping I’ve been neglecting). You can count on the fact that I’ll be making these again for my tins. They were surprisingly easy, and seem to hold up really well when rattling around in a tupperware all day, which means they are perfect cookie tin cookies. Bonus: they look super impressive.

White Chocolate Peppermint Cookies

Today is my last blog post of 2014, and what a year it has been. There have been a lot of changes, both good and bad, and, honestly, I’m kind of ready to leave it behind. A new year always holds such promise for fresh starts and trying new things, and I could use that right about now.

Chocolate Candy Cane Cupcakes

It was 60° on Friday.  It’s December.  It’s really hard to get into the Christmas spirit when the weather feels like we’ve skipped about 5 months.  Fortunately, I planned Christmas activities for the weekend anyways.  And now it’s snowing!  It all works out.
