Chocolate Zucchini Bread

Calling this a “bread” feels kind of like lying. Sure, the base of this is a zucchini bread, and there is definitely a LOT of zucchini. Which makes you feel like it’s healthy. But then it’s moist, full of chocolate chips, and seems like a better pair for ice cream than coffee. Which makes you feel like it can’t possibly be healthy. However, I’m not one to make such decisions for you, so if you want to call it a vegetable bread, and therefore basically a salad, I’m not going to stop you. If you want to call it more

Nutella, Sesame and Hazelnut Rolls

This has been a pretty amazing weekend. Yesterday, I got up bright and early and rode 100 miles on my bike from Boston to Cape Cod for the Best Buddies Challenge Ride. I rode with some pretty cool people from work, and we could not have had better weather – a little sunny but mostly overcast, not too hot, and no rain. Then, when we got to the finish, we got to eat lobster, drink beer, and listen to a Flo Rida concert, which is great by itself, but after a huge bike ride is especially awesome. And if that

Mint Chocolate Pistachio Fridge Cake

The best-tasting treats are not necessarily the prettiest things I make, even if that rainbow cake was pretty delicious. No, they’re the dump-everything-into-a-bowl-and-hold-it-together-with-chocolate recipes. They’re quick to make, clean out your pantry, and give you just the right amount a sweet and crunchy. Take this Mint Chocolate Pistachio Fridge Cake. Maybe you have chili chocolate, or salted chocolate in your kitchen. That’s fine – use that instead! Or maybe pistachios aren’t your thing, but you’ve got pecans and walnuts. Perfect! And maybe you’re someone that just doesn’t like rum-soaked raisins (I can’t imagine why). Try whiskey-soaked dried cherries. This recipe

Quick Bark

Ever find yourself in need of a quick dessert for a holiday? This is your solution. All it takes is a quick trip to Michael’s (or whatever other craft store you know of that sells every possible color of Candy Melts), and maybe 30 total minutes of assembly and waiting time. End result looks very impressive, is endlessly adaptable to your tastes, and can be piled in a tupperware without worrying about ruining it. Extra perk? It fills the need at cookouts for something sweet at the end of a big meal without requiring the commitment of a slice of

Zucchini Walnut Bread

My last recipe from my Cambridge apartment! And, unfortunately, it’s going to be a short post because I’m very much still in the middle of packing. When I was picking this recipe, I was looking for a quick bread, mostly because it was graduation week and I didn’t want to be spending a ton of time on it. And I needed breakfast food that would last awhile. So I looked back through the breads I had made in the past, and was surprised to find that I had only made zucchini bread once, a long time ago, with chocolate chips

Carrot Bread

What do you do when your boyfriend asks you to pick up his root vegetable CSA? Google carrot recipes, thinking you’ll be able to get through them quickly, and realize that even carrot-based recipes don’t use enough carrots to make a dent in your bag of produce. Guess that means I’ll have to make carrot cake for Easter! (Also, if you can think of any other carrot recipes, any at all, please send them to me. Doesn’t have to bae a baked good!)

Nutella Rice Krispie Treats

Good thing it’s Daylight Savings Time, or I wouldn’t have gotten this blog post up in time! I was really torn about whether to bake this week, because I made some chocolate cupcakes with butterscotch filling last week, and had been kind of planning on using those. But then I decided that since the base chocolate cupcakes were the same as ones I have made in the past, I couldn’t use a slight variation on them. Instead, at around 6pm today, I asked my roommate for some ideas on desserts I could make quickly, and she recommended Rice Krispie Treats.

Banana Muffins

Ever look over at your fruit bowl and realize your bananas have turned almost completely brown before you even had a chance to eat one? Looking for a quick recipe when you don’t necessarily have all of the ingredients on hand for the best banana bread ever? Good news: if you bake (from scratch) ever, you definitely have everything to make these muffins and feel like you didn’t waste food after all.

Cinnamon Pinwheels

I’m officially on summer vacation! With a month before I start my last year of school ever, I’m definitely trying to pack a lot in. In a couple of hours, my mom and I will leave for our annual Nantucket trip. Then, two days after we get back, I’ll head out to Montana and Wyoming for a couple weeks of hiking and generally not being in an office. With all of this traveling, baking will be a bit more challenging, but don’t worry – I’m committed.

Chocolate Coconut Macaroons

Happy birthday, Mom! Though last weekend we had your surprise party, this Friday was the real deal, so of course, despite our emergency trip for coconut cake, I had to make one more coconut recipe. This week, a Kathy Muncey special: chocolate coconut macaroons.
